This globally awarded, single grain whiskey has been aged twice – first in American oak Bourbon barrels and again in Spanish oak Oloroso Sherry barrels. While the Bourbon barrels brings a sweetness and smooth vanilla notes, the Oloroso casks layer on depth of dried fruit and Spanish oak spices.

Tasting Notes:

Appearance: Very bright and yellow, translucent. Many even spaced and quick legs.

Nose: Sticky, rich, cloying sweetness. A little tropical, like date cake. A burnt sugar note prevails over the top. Revisiting the nose after a few sips brings a bit of musk to the aroma. 

Palate: Light in texture and begins worlds away from what the nose would have you believe. Spiced pears are the first note I get, with the spice lingering past the fruit.

Our Double Barrel Irish Whiskey begins its maturation process in flame charred ex Bourbon American oak. It is finished in Oloroso casks from Montilla, a small town found in the rolling hills of the Spanish countryside.

We choose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land , encapsulated in the liquid when we put our whiskey in these slow toasted casks for aging.

Tasting Notes:

The mid palate tastes a bit rummy, leading into a sweet finish much more reminiscent of the nose. A bit of butter and vanilla add to that flavor. Finishes quick and almost a tad bitter.

About the Producer

Founded by five friends in the Wicklow mountains outside of Dublin, Glendalough distillery looks to bring back the magic of Irish craft whiskey distilling that’s been lost in the face of the massive operations like Midleton and Bushmills.

Founded in 2011, Glendalough is a relative newcomer to the whiskey world, but isn’t afraid to eschew traditional Irish whiskey norms to explore new territories.

After originally sourcing whiskies from Cooley distillery, they released their first expressions with their own distillate in 2019 and have created a cult following around the world since. They now have a solid core offering of mostly non-age stated whiskies but have recently explored using famous Japanese Mizunara oak in their more limited expressions.
