Tennessee High Malt is the rich, malt-forward approach to bourbon. Made from the finest malted grains, each step of our process has been crafted to highlight the complexity of these ingredients. The signature Tennessee High Malt recipe – known to our distillers as “Barrel 91” – was selected from the first 100 barrels produced at the Experimental Distillery.

After aging more than 2 years, Chattanooga Whiskey 91 utilizing one version of the classic solera process, they bring together 100 fully aged barrels of Chattanooga Whiskey 91 into one large, charred white oak Solera finishing barrel which rarely goes empty. After each small batch bottling, they then top the solera with 8-12 mature barrels. This continued process allows the younger and older whiskey to marry together, imparting a gradual complexity over time.

Tennessee High Malt is the rich, malt-forward approach to bourbon. Made from the finest malted grains, each step of our process has been crafted to highlight the complexity of these ingredients. The signature Tennessee High Malt recipe – known to our distillers as “Barrel 91” – was selected from the first 100 barrels produced at the Experimental Distillery.

Made from 4 grains, including 3 select specialty malts, Tennessee High Malt starts with an attemperated 7-day fermentation. This extended process highlights both the rich, high-malt character while also adding a nuanced, fruity complexity to the spirit. After fermentation, each batch is distilled in our custom 30ft. column still before being laid to age in two types of charred & toasted oak barrels. This combination of cooperage imparts a balanced, confection-rich character to the aged whiskey, while also harmonizing with its malty-rich character.

Dried apricot, sweet tea, and honeyed toast. Medium bodied with a lingering, malty-sweet finish.

About the Producer

Chattanooga Distillery craft whiskey at two locations: The Experimental Distillery and The Riverfront Distillery. The Experimental Distillery, open to the public for tours and tastings, pushes the boundaries of whiskey-making, crafting one-of-a-kind whiskeys that can’t be found anywhere else. Our Riverfront Distillery serves as the production home of our signature Tennessee High Malt bourbon.

Opened in March 2017 and located in downtown Chattanooga, the Riverfront Distillery transformed a historic car dealership into one of the largest craft bourbon distilleries in the South. This location serves as the production site of our signature Tennessee High Malt, our unique style of straight bourbon whiskey.

This grain-to-glass distillery is home to the custom-made 30ft Vendome copper column still and 100-gallon pot-still style double. With room to age more than 4,500 barrels of whiskey, the dunnage-style heated barrelhouse ebbs and flows with the hot & humid summers and mild winters of the Tennessee River Valley. Nestled inside the 46,000 square foot distillery is our 4,000-gallon charred, white oak Solera barrel, which finishes the signature Chattanooga Whiskey 91.
