Mastiha liqueur is an ancient Mediterranean tradition that has been around for more than 2,000 years, and the Greeks, Romans, Byzantines, Genoese and Ottomans all used the sap from the mastiha bush for medicinal and other purposes. For this Greek-inspired American liqueur, bark from the bush is cut by hand and hung for fifteen to twenty days to collect the sap. The resultant distillate is blended with sugar, alcohol and mineral water to create a rich, distinctive spirit with notes of pine, anise, fresh herbs and citrus.
