By using our expertise in creating our delicious flagship bourbon, we tweaked our recipe and upped the wheat and kept the corn at the minimum. Our wheated bourbon is a smooth and layered whiskey aged for a minimum of five years and consists of 51 percent corn, 45 percent wheat and four percent malted barley. The result is a liquid that allows for each ingredient to not only shine on its own, but highlights what happens when success meets craft.
The key to our bourbon is our high malted barley content in our mashbill. By investing in our bourbon and using four times more malted barley than traditional recipes, we have created a non-traditional bourbon that generates sweet and light components. The malted barley combined with the spicy essence of clove from the rye, and the classic rich bourbon character from the corn, amounts to a robust and smooth taste profile.

The Old Elk is a collaboration with Aged and Barrel and its recipe includes three quality ingredients – malted barley, rye, and corn. By investing in our bourbon and using four times more malted barley than traditional recipes, the bourbon generates sweet, light components. The malted barley, combined with spicy essence of clove from the rye, and the traditional rich bourbon character from the corn, creates the overall robust taste profile.

Traditionally, the bourbon proofing process takes 24-48 hours. However, we choose to do it for significantly longer (weeks instead of days) and in smaller increments to keep the liquid cool when going from barrel to bottling proof. We call this patient technique our “Slow Cut™” proofing process which is used for our flagship bourbon.
We see this critical Slow Cut™ proofing step as not only adding to the ideal “smooth and rich” character of Old Elk Bourbon, but also demonstrating our ongoing commitment to making the highest quality and smoothest bourbon whiskey without cutting any corners and giving the product the right amount time it needs to be the very best.
THE SCIENCE BEHIND OUR SLOW CUT™ PROOFING PROCESS
To proof alcohol, water is added until the liquid has reached a desired strength. When water is added to alcohol, heat is generated. At a distillery scale, hundreds of gallons of water are used at a time – enough to burn off many of the lighter, finer bourbon flavors.
Our choice to proof differently means that we can bottle every last drop of flavor, and retain the smoothness that is unique to Old Elk. While our Slow Cut™ proofing process takes significantly longer than most common recipes, taking the time to proof slowly makes all the difference.
